Well, I guess the first month of the blog is going to be more of a soft opening than a full blown opening. Right after a painful hand infection that got me behind on posting, I fought off the flu for the last few days. Now, that I am starting to feel more normal, the posting should be back to a normal pace with still some backlogged items to post.
One of the things that the Wife of the Blog and I have appreciated so far about WeightWatchers is that it is not some crazy diet where you have to eat just tree roots or berries. This recipe from last night was a great example of this. We got to enjoy a filling, great meal and did not have to feel guilty about having carbohydrates. This meal was also super easy and came together in probably 15 minutes max. It is a perfect easy and healthy weeknight meal. A great catch!

Weight Watchers Spaghetti Carbonara
Serves: 5
WeightWatchers Points Per Serving: 6
8 oz. spaghetti
3 slices center cut bacon, cut into small pieces
1 egg, beaten
1 egg white, beaten
1 garlic clove, minced
6 tbs. grated parmesan cheese
Salt
Pepper
Bring a pot of water to boil and cook the pasta according to the instructions on the package. Cook the bacon with the garlic in a frying pan on medium-low heat until the bacon is cooked (about 6 minutes). Once the bacon is crispy, remove the garlic and keep the bacon and grease in the pan. Add the cooked pasta into the pot and toss well. Remove from heat. Add the eggs and parmesan and toss well to coat. Season with salt and pepper. Serve immediately.
