After a night of leftovers, I am back and ready to share another great meal with y'all. I made this meal once before and didn't have a great memory of how this tasted, but it totally rocked tonight and it will definitely be added into the rotation. With it being cold outside and everyone being inside for most of the day, this meal created a wonderful smell and warm feeling throughout the house. Not that we needed an easy meal to make today since everyone was home for the "snow" day here in North Central Florida, but this meal was also easy which makes it an even better addition to your recipe box.

Crock Pot Bacon Wrapped Tenderloin:
Modified from a recipe on Plain Chicken
1 2-3 lb. pork tenderloin
10 slices of bacon
1/4 cup brown sugar
1 tsp. rosemary
1 tsp. garlic powder
1/4 tsp. red pepper flakes
Salt, to taste
Pepper, to taste
In a small bowl mix together the brown sugar, rosemary, garlic powder, salt, pepper, and red pepper flakes. Rub the mixture on the pork tenderloin. Wrap the bacon slices around the pork tenderloin. Cook on HIGH in the crock pot for 4-5 hours. Take the tenderloin out of the crock pot and place on baking sheet and BROIL for 5 minutes to crisp up the bacon.
Squash Casserole
Fresh squash cut and diced
1//2 cup cheddar cheese
1 tbs. sour cream
Salt and pepper to taste
Cover the squash in water and bring it to a boil on the stove. Once it boils, cover the squash and reduce the heat to medium. Cook until the squash has softened. Once the squash is softened, drain the squash and place the squash in a mixing bowl. Add the cheddar cheese, sour cream, salt and pepper. Mash the squash and stir until all of the ingredients are combined.
