Low Carb Bacon Cheeseburger Casserole

After a great and healthy supper on Monday night, we decided to try this Low-Carb Bacon Cheeseburger Casserole to stay on the right track during the week.  We had a meeting with out real estate agent right as we got home so time was of the essence to get supper on the table before the twins started screaming and this recipe did the trick.  This recipe is more or less a bacon cheeseburger quiche than it is a casserole. It was tasty and both kids and both adults cleaned their plates.  If you are looking for a low-carb recipe then this one would definitely work for you.  If you are more strictly counting calories (like I am), this may be a meal you hold off on until the weekend or when you have some flexibility.


In the New Year, I have recently started to do the WeightWatchers point system to start fit back into some of the clothes that have sat in my closet for awhile and get ready for my next chapter of my educational career.  So, now for each recipe, I will also be adding the number of servings and points that each meal contains.  This will help all of us reading this blog to better understand the nutrition that I am eating.  Don't worry, there will still be plenty of great, healthy recipes coming on the blog as well as some of the good stuff when I get to cash in my left over points on the weekend.

All that being said, here is the recipe.

Low-Carb Bacon Cheeseburger Casserole

Serves: 8
WeightWatchers Points per serving: 11

1 lb. lean ground beef
1/2 lb. bacon, cut into pieces
2 tbs. ketchup
2 tbs. mustard
1 onion, diced
4 eggs, beaten
1 cup shredded cheddar
1/2 cup low-fat milk
4 oz. light sour cream
1 packet Hidden Valley Ranch dressing mix

Preheat the oven to 350 F.  Cook both the ground beef with the onion and the bacon in separate skillets on the stove.  When both meats are cooked, combine into one skillet.  Add the ketchup, mustard, and ranch dressing packet into the skillet with the meats and combine.  Put the meat mixture into a lightly greased 8x8 or 11x7 pan.  Sprinkle the cheddar cheese on top.  Whisk together the eggs, milk, and sour cream.  Pour on top of the meat and cheese.  Bake uncovered in the oven for 30-35 minutes.

Well, I guess the first month of the blog is going to be more of a soft opening than a full blown opening.  Right after a painful hand infection that got me behind on posting, I fought off the flu for the last few days.  Now, that I am starting to feel more normal, the posting should be back to a normal pace with still some backlogged items to post. Shrimp & Chicken Sausage Paella

One of our favorite places to eat that we do not get to eat at often is the Columbia Restaurant in the middle of downtown St. Augustine.  Their paella, 1905 salad, and house-made bread is a meal that cannot be beat.  While I am not a wine drinker, the Wife of the Blog is also a big fan of their red wine sangria.  As those of us with little kids can attest, eating out anywhere, let alone a nicer place an hour-plus away is not a common occurrence.  Either we would rather save money and eat at home and/or we would rather parent and wrestle our kids in the peace of our own home. While not quite as good as the Columbia's this paella did a great job of satisfying our Columbia cravings without having to pack the kids in the van and drive an hour to get it.  This recipe will certainly be making it into our meal rotation for the future.  I tweaked the original recipe that I found a little bit to make it a little easier to make and it seemed to work for me....
