Momma Original: Hot, Cheesy Chicken Sandwiches


Tonight's supper was a favorite of mine and my family growing up.  It was something that I had not had in sometime, but for some reason had a craving for.  So, when I was home in DeLand over Christmas, I went through my momma's recipe box and was excited to find this recipe.  I couldn't wait to make it and try it in my own kitchen soon in the New Year.

I enjoy cooking and sharing meals with family and friends whenever I can and tonight I got that chance.  My wife's mom and dad recently upgraded to high speed cable internet from DSL so we had planned to go over there and help them get the most of their new internet speed with learning how to use Netflix and other streaming services.  Because I knew we would be doing that, I thought that these open-faced sandwiches would be the perfect low-key supper to feed everyone and not be too intensive on dishes.  I also like to help out and cook for my in-laws when I get a chance because they are a big help to us on a daily basis by picking up our twins from daycare and dropping them off with us at work.

Well, my assumptions were correct.  This was the perfect, low-key Friday night meal.  This recipe made a ton of food and was a hit for everyone from grandparents to grandkids.  It was an awesome feeling to be able to replicate a favorite recipe of my momma's from the past.  I can't wait to try and make other original recipes in the future

Hot Cheesy Chicken Sandwiches
Momma original



6 cups cubed cooked chicken
1-1 ½ cups chopped celery
1 can condensed cream of mushroom soup
¾ cup mayonnaise
¾ cup chopped onion
½ cup chopped green pepper
1 teaspoon ground mustard
½ teaspoon salt
½ teaspoon pepper
4 cups cubed processed American cheese
24 hamburger buns


In a large bowl, combine the first 9 ingredients; mix well.  Pour into an ungreased 2-½ qt. Casserole top with cheese.  Cover and bake at 350* for 45 minutes or until bubbly.  Let stand for 5 minutes.  Spoon ⅓ cup onto each bun.

Well, I guess the first month of the blog is going to be more of a soft opening than a full blown opening.  Right after a painful hand infection that got me behind on posting, I fought off the flu for the last few days.  Now, that I am starting to feel more normal, the posting should be back to a normal pace with still some backlogged items to post. Shrimp & Chicken Sausage Paella

One of our favorite places to eat that we do not get to eat at often is the Columbia Restaurant in the middle of downtown St. Augustine.  Their paella, 1905 salad, and house-made bread is a meal that cannot be beat.  While I am not a wine drinker, the Wife of the Blog is also a big fan of their red wine sangria.  As those of us with little kids can attest, eating out anywhere, let alone a nicer place an hour-plus away is not a common occurrence.  Either we would rather save money and eat at home and/or we would rather parent and wrestle our kids in the peace of our own home. While not quite as good as the Columbia's this paella did a great job of satisfying our Columbia cravings without having to pack the kids in the van and drive an hour to get it.  This recipe will certainly be making it into our meal rotation for the future.  I tweaked the original recipe that I found a little bit to make it a little easier to make and it seemed to work for me....
