Tonight's supper is a favorite of ours especially when shrimp is on sale at Publix and/or we are trying to eat lighter. These recipes came from one of our really good friends, Jenni, who started blogging a couple years ago at Tan Lines & Slim Waistlines with some great low-carb, healthy recipes. To be honest when I first decided to try the cauliflower mash I was a little skeptical, because I had some substitution recipes and they weren't close enough to the original to make the switch. That's not true with this mashed cauliflower! Jenni did a great job putting this one together. There is still a difference to traditional mashed potatoes, but it is close enough that my wife and I have started to opt for this instead. Sometimes, we serve this with some spinach sautéed with onion and bacon grease (I keep a jar in the fridge), but it was a long day and I just decided to opt for some leftover Momma's Baked Beans from Saturday. Nevertheless, this is a great quick, easy, and healthy weeknight meal to add to your rotation.

Spicy Shrimp & Cauliflower Mash
From Tan Lines & Slim Waistlines
Shrimp
1 tbs. cooking oil
1 lb. shrimp
Salt
Pepper
Garlic
Cayenne
Paprika
Heat the cooking oil in the skillet on medium//high heat. Season and coat the shrimp. Place in the pan and cook until they're pink.
Cauliflower Mash
1 bag frozen cauliflower heads
1 tbs. cream cheese (don't tell Jenni, sometimes I use more)
1/4 cup grated parmesan cheese
Salt
Pepper
Garlic
Steam cauliflower in the microwave and then drain it. Add cauliflower to a stand mixer or put in a mixing bowl. Add remaining ingredients and mix until you get the consistency that you are looking for.
