Bacon Cheddar Burgers with Ho Sauce


One of our family's best discoveries over the last couple of years has been the pre-made Bacon & Cheddar Burgers from Publix.  The burgers were suggested to us by one of the people in deli and we ended up trying them and became obsessed with them.  I have almost given up on forming my own patties and usually just go with these.  They have also become one of our favorite quick go-to meals when we are in a pinch.  We usually keep a pack or two in the freezer to defrost if we need them.

Well, today was one of those days.  We were running some errands and didn't get back home until well after our usual dinner time.  As any of y'all with toddlers will understand, when they are off their schedule, toddlers can get cranky real quick.  On this week's menu, we were scheduled to make leftovers, but the bacon wrapped tenderloin from last night would not have stretched enough for the 4 of us.  So, we just popped these burgers on our Foreman and they were ready to serve in about 5-6 minutes.



The one wrinkle that I added for tonight's supper was that I made a copycat recipe of the sauce from a legendary burger place, Tolly Ho's, that my wife and I visited when traveling to Lexington, KY more than a decade ago (the self-described "Best Ho House in Kentucky").  The burgers, tots, and shakes were so good that we ate it multiple times in the weekend that we were there to see the Gators play.  One thing that they put on their burgers that took them to the next level was their "Ho Sauce".  Earlier today I found that the restaurant had given their recipe to the Cooking Channel and I decided to give it a shot.


When seeing that capers were in the recipe, I was a little skeptical because I didn't remember that from the times that I ate there (more recently in 2015), but it definitely worked.  The sauce was great and came close to replicating the original Ho Sauce.

Bacon Cheddar Burgers
(1) 2 pack of Publix Bacon Cheddar Burgers
2 Hamburger Buns
2 slices, cheddar cheese

Preheat the Foreman grill to 400 degrees F and place the burgers on the Foreman grill.  After 5 minutes, add a slice of cheese to the burgers and cook until the cheese is melted.  Remove and place on the hamburger bun.

Tolly Ho's Ho Sauce
From the Cooking Channel

1/4 cup mayonnaise
1 tbs. sweet pickle relish
2 tsp. jarred capers, chopped
Salt and pepper, to taste

Combine all of the ingredients.  Put on the top hamburger bun.

Well, I guess the first month of the blog is going to be more of a soft opening than a full blown opening.  Right after a painful hand infection that got me behind on posting, I fought off the flu for the last few days.  Now, that I am starting to feel more normal, the posting should be back to a normal pace with still some backlogged items to post. Shrimp & Chicken Sausage Paella

One of our favorite places to eat that we do not get to eat at often is the Columbia Restaurant in the middle of downtown St. Augustine.  Their paella, 1905 salad, and house-made bread is a meal that cannot be beat.  While I am not a wine drinker, the Wife of the Blog is also a big fan of their red wine sangria.  As those of us with little kids can attest, eating out anywhere, let alone a nicer place an hour-plus away is not a common occurrence.  Either we would rather save money and eat at home and/or we would rather parent and wrestle our kids in the peace of our own home. While not quite as good as the Columbia's this paella did a great job of satisfying our Columbia cravings without having to pack the kids in the van and drive an hour to get it.  This recipe will certainly be making it into our meal rotation for the future.  I tweaked the original recipe that I found a little bit to make it a little easier to make and it seemed to work for me....
